Cookies are in the oven

Mirah

I love you
And the tea is almost ready.
Actually, I'll be making dinner tonight, so I hope you ladies are ready for a feast!

If you comb your hair, brush your teeth, wash your face and put on a clean shirt, we'll let you have tea and cookies with us.

Cool. Pie is awesome. I'll put on the coffee. Do you prefer the French Vanilla or the Vanilla Nut creamer?

Well, I used to bake quite a lot. Mostly cookies and cakes. But now, not so much anymore. No one to eat my creations. However, for those of you who may wish to bake some cookies of your own, here's a knock 'um dead recipe for Chocolate Chip Cookies:

CHOCOLATE CHIP COOKIES

Ingredients:

1 cup (2 sticks) butter, softened
1 cup sugar
1 cup brown sugar
2 eggs, lightly beaten
2 teaspoons vanilla extract
2 cups all-purpose flour
2 cups oatmeal, processed in a food processor to a fine powder
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon ground cinnamon
Freshly grated nutmeg
1 1/2 cups semisweet chocolate chips
1/2 cup grated bittersweet chocolate (not unsweetened)
2 cups chopped walnuts
3/4 cup shredded coconut, lightly toasted in a 350
oven for 5 minutes (optional)

Directions:

Preheat oven to 375. Prepare baking sheets
Beat butter and sugars in a heavy stand mixer until light and fluffy, about 2 min. Add the eggs and vanilla and mix well.

Sift together the flour, oatmeal, salt, baking powder, baking soda, cinnamon, and nutmeg to taste. Add to butter-egg mixture and mix till all is moistened. Stir in rest of ingredients.

Shape into balls of 1 to 1 1/2 tablespoons each. Place about 2 inches apart on the sheets. Bake for 12 to 14 minutes until golden brown. Let stand for a few minutes before cooling on racks.

Oh, no. Fresh baked beats store bought any day of the week!

We can munch on these brownies while the cookies are baking.
