Sandwiches

I worked late last night, and Subway was the only thing open near the bus stop, so I went in and got myself a nice Subway Melt. 4 kinds of cold cuts, provolone cheese, bacon, L/T/M, all toasty and delicious.

A few weeks ago I started hurting really bad, like someone had beat me up with a sledge hammer. I thought my mild arthritis was getting worse so I upped the tylenol arthritis and added some supplements to my diet. Finally, I had to go to the doctor last Tuesday to see what was going on. She gave me a prescription for the arthritis, which helped, and did a bunch of tests. She called me the next day and told me I have become diabetic and that my blood sugar was in the 300s, almost 400. She put me on glucophage immediately. I finally feel pretty good and I slept 4 whole consecutive hours last night. Now, I'm left with a quandry with what to eat. I already eat low fat, low sugar/carbs. Tonight is shopping night but I don't think I'll go. I really don't need to pay for water and air from the grocery store.
 
Really? How much and is it any good? Is there chocolate, spaghetti or mashed potato flavors? I would absolutely love some mashed potatoes with butter ... or with gravy ... cream gravy ... or even brown gravy ... and dinner rolls.

Well, I'm going to go to the grocery store anyway. I'm hungry now.
 
Willy Wonka isn't making this. It's teh jooz. The cans retail anywhere from $10 - $15 a pop. The air ain't that great. I've breathed better air at my parents' house in the mountains. I get to go there, eat their food, and sleep in the backyard for free. I don't need to pay $10 to suck on LA's tailpipe.
 
The jooz? Hey - the Jooz are eater people with lots of feasts and such. Surely they make some good stuff to eat.

No more orange juice for me. I don't know how I will live without orange juice.
No more watermelon either. I don't know how I will live without watermelon either.
No more apples, cantaloupe, mango, peaches, pineapple, plums.

I can have bananas, pears, asparagus, broccoli, carrots.

Ohhhh ... I can have a bacon/egg/cheese croissant if I watch my fat intake the rest of the day.

Okay. Maybe I'll be all right after all. Just a panic.
 
Awww...there's nothing better than fried chicken, homemade macaroni & cheese, and a Shasta drink!!
 
Hoorah!!! I can still have cornbread and vegetable beef stew. I think. I'm not sure.
I mean, I stay under 45 fat grams a day as a rule. Most of what I eat is low in sugar because I eat no and low fat only. I've never had a problem with salt. However, I'm not use to counting carbs. And, no where will the advisers just tell me how much I can have in the way of carbs daily. At this point all I understand is that I want the sugar value to be half or less of the carbohydrate value. Most of what I eat is in the 2 to 5 grams sugar range. However, a good deal of what I eat has carbs in the 40s. Is that too high? I guess so because my blood sugar is around 4 times what it should be. At what point does my blood start boiling and I keel over dead?

Sweetheart, if you cut out your carbs (limited to 10 grams a meal) and lay off the bread, milk, ketchup, potatoes etc etc you can control your hyperglycemia without the glucophage.

My blood sugar was in the 500's (seriously) and my A1C was almost 15 (again seriously). Low fat is probably the worst thing you can do for diabetes, bwecause it's always a tradeoff for high carbs.

NO SUGAR, also no sugar carbs, thats pretty easy. Milk for example is 11grams of carbs per 8 ounces, and those 11 grams are all sugar, so you'll spike in 15 minutes to about 220 after just one glass. Doesn't matter if it's whole, 2% or skim. Ditto ketchup. 4 grams of carbs per serving, 4 sugar grams. Half and half in your coffee however is fine.

Apples are fine, but no apple juice. Oranges are fine too, but no orange juice. It's really all about protein and fiber, something very few diabetics ever truly understand.

You can subtract your fiber grams from your carb grams when choosing. Walnuts for example are 5 grams per serving of carbs, but have three fiber grams, so munch away. Put Ranch Dressing on everything YUM.

It works like this...if you switch your body over to burning fat instead of carbs (not in an Atkins Diet kind of way) but in a way that balances your protein you'll lose weight (if you have that problem) and control your sugar.

Salads are good. I like to take lots of fresh greens (spinach especially), and put walnuts and almonds, and sliced swiss and chevre, just a little tomato and a sprinkle of cranberries (like 10) some sliced avocado and a couple of strips of crumbled bacon, a little apple, and then slather some Ranch on top.

I forget all about what I cant have after that :) A little Pellegrino with lemon and AWESOME.

Lots more ways to have fun too. You can have a slice of toast for example if you use a High Fiber kind of dealio (Arnold's makes a brand that has 20 grams of carbs a slice, but 5 grams of fiber) and if you slather it with peanut butter and butter (no carbs in butter, 5 grams of carbs and three grams of fiber in the peanut butter) you have a yummy snack that delivers almost 10 grams of fiber and about 16-20 grams of protein.

There's even a pasta you can actually eat! It's called "Carbo Nada" it comes in at about 11 grams net of carbs a serving, and if you use a fettucine sauce with it, instead of red sauce, you can indulge a little. Don't forget to slice some veggies up into the mix.

I eat well...better actually than before, and enjoy it more.

You know, I love you so much it hurts. I'm sorry you're struggling. I'd love to come down for a week and cook for you. Well, that's not all I'd like to do, but feeding you properly would be a start.

Fiber grams = Subtract from carb grams

Sugar grams - should equal 20 percent or less of carb grams or dont eat it. No matter how much fiber if the sugar and the carb grams are relatively the same, your sugar will spike from eating it.

Protein grams = the higher the better.

I've been controlling my "diabetes" for three years this way without insulin or any other drugs, have lost fifty pounds and feel better that I ever have.

All meat and fish have zero carbs btw. Veggies are a little trickier, but have high fiber. Carrots and tomatoes are kind of bad, but if used sparingly are ok.

Remeber, it's all in HOW something is cooked. Chicken can be a great source of protien, but if it's fried or baked, it doesn't have the same healthy quality as if it had been grilled.
