Bah. Grocery shopping in hot weather. I'm guilty of buying frozen pizzas, mac'n'cheez, etc, but at least once a week I make an actual prepared meal*. Trying to think of something that isn't going to heat up my kitchen and I realized I hadn't had tuna-noodle-salad in awhile and that's a cold dish. Then I thought about how it is prepared. Step 1: Heat a big pot of water to boiling...
Still, I guess everything I make involves the stove. Hmm. I could do pulled pork sliders. That's crock pot. Feels more like a lunch meal than dinner but maybe... Haven't had it in awhile and it is yummy.
*I should add, while typing this, I'm realizing even things I consider "from scratch" have a fair amount of premade stuff. Spaghetti sauce, cole slaw, etc. Pre-cut frozen veggie mix for stir-fry. But what can I say? I'm not going to buy a bunch of ingredients I use once, dirty a bunch of pans, and spend hours on something I can buy ready to go. Even (most) restaurants don't do everything from scratch.
Fuck it. I think I'll do tuna-noodle salad.
Boil up a big box of elbow macaroni.
While it is draining, dump in a bag of frozen peas and 3 or so cans of tuna.
Dump in most of a bottle of ranch dressing.
Add any other spices, olive oil, etc, that seem appropriate.
Mix together, chill, and package into single serving sizes.
Shit, as I type this, that sounds more like lunch too.
